Making Potato Salad on Lifestyles!

I hope you are having a nice Memorial Day and you have the chance to spend time with your family and friends. We spent a wonderful weekend visiting our son and daughter-in-law! With the official start of summer it is time for picnics and barbecues!

One of my favorite summer foods is potato salad!  Growing up my grandmother made potato salad with mayo, eggs and even bacon grease. Well, I don’t eat bacon anymore so I found this recipe that is my absolute favorite! This recipe uses both tofu and cashews, since my son is allergic to cashews I often make the mayo with just the tofu and I sub sunflower seeds for cashews.
