My Favorite Carrot Dog Recipe!

If you watched my cooking segment on News 25 Lifestyles, you saw me talking about one of my favorite recipes, carrot dogs! I love carrots and eat them everyday. Most days I will have at least 1 1/2 cups of raw carrots on my dinner salad. I also love to make carrot lox and just eat raw carrot sticks with hummus.

My very favorite way to make carrots is boiling them and marinating them to make these carrot dogs!

One of the great things about carrot dogs is that you can top them with anything you like, well almost anything! This Chicago native never puts ketchup on a carrot dog. LOL!

My favorite of course is the typical toppings for a Chicago Carrot dog, i.e. pickle relish, yellow mustard, sport peppers, tomato wedges, dill pickle spear and topped off with celery seed on a poppy seed bun! When I don’t have those toppings I also love topping my carrot dog with yellow mustard and chopped onions!

I have made a lot of carrot dog recipes in the last 10 years; however this one is the best. I find it is best to marinade the carrots for at least 2 overnights to get the best flavor.

Here is the link to the recipe from Brand New Vegan. Enjoy!
