Power Salad with a Smokey Cashew Dressing

Today I was on News 25 Lifestyles. Ange asked me to make a Power Salad. While I was not familiar with the term Power Salad, I knew the perfect salad and dressing to make!

Often when we think of salads we think boring! Well, I can guarantee that this salad is not boring. Another great thing about this salad is that you can change it to meet your tastes. Here is what I like to include in my salad.

mixed greens
garbanzo beans
yellow squash
red onions
shredded carrots
tofu feta

But as I said you can add what you like! Sometimes I like to add fruit to my salads.

Here are things you can add:
diced apples
diced pears
any other fruit you like
any bean
shaved brussel sprouts
shredded cabbage


Now here is one of my husbands favorite dressings! Ron Rhodes loved it too!

Smokey Cashew Dressing

Susannah’s Smokey Cashew Ranch Dressing

1/2 cup raw cashews (If you do have a high speed blender soak cashews in hot water for at least 30 minutes).
1/2 cup water
1 teaspoon liquid smoke
1/4 cup apple cider vinegar

1.Drain soaked cashews and rinse them.
2. Put all ingredients in a blender and blend until smooth
3. Taste and add up to 1/2 teaspoon more of liquid smoke it you want a very smokey flavor.

Tofu Feta Recipe

16 ounces extra-firm tofu
2 tablespoons water
4 tablespoons yellow miso
1 tablespoon lemon juice
1 teaspoon salt
2 teaspoons dried basil
1 teaspoon dried oregano
1/4 teaspoon dried rosemary
2 tablespoons nutritional yeast

1. Wrap tofu in paper towels, then wrap in a clean dish towel. Press tofu for at least 15 minutes
2. Unwrap tofu and break into little pieces or you can cut into little cubes.
3. In a medium bowl whisk together all the ingredients, except the tofu.
4. Add the tofu to the marinade and let rest for at least 20 minutes.
